Eggplant Lasagna




Here is my recipe for Eggplant Lasagna which uses no pasta. Eggplant is very, very low in calories, (1/4 of a medium = 35 calories)


1 Eggplant, sliced lengthwise in 1/4 inch slices
1 pound ground chicken or turkey
1 jar spaghetti sauce (Classico brand has no High Fructose
Corn Syrup in it)
½ red pepper, diced
1 onion, diced
1 handful fresh spinach
Italian spice blend
Accent spice
Garlic & garlic powder
Salt & pepper
¼ - ½ cup reduced fat mozzarella cheese
1/8 – ¼ cup reduced fat parmesan cheese

Place sliced eggplant on ungreased (may use Pam spray) cookie sheet. Sprinkle eggplant with spices, cover with foil and cook under hi broiler for 15-20 minutes. While eggplant is cooking, sauté chicken or turkey in ungreased pot with onion, red pepper & spices til cooked. Add spaghetti sauce to meat along with the handful of fresh spinach. Cook till spinach is wilted and sauce is hot. Layer in casserole dish, starting with meat sauce, then eggplant, then meat sauce, then eggplant, then top with meat sauce. Bake covered in 350 oven for 45 minutes. Sprinkle with cheeses and bake an additional 10-15 minutes, with no cover.
